I like things that are quick and easy because I'm on the go a lot. For people like me who always seem to be in a hurry, here's one of my favorite recipes:
- Saute 1 cup of sliced mushrooms, 6-8 chopped green onions and 2 cloves garlic in butter.
- Add 1/2 lb. of fresh medium size shrimp and 1/2 lb. of Bay scallops. Continue to cook over medium heat until seafood is done. Drain excess liquid from pan.
- Add 16 oz. of prepared alfredo sauce (we like the Monterey Pasta Company brand) and 1/4 cup dry white wine. Stir and continue cooking until heated through.
- Meanwhile, prepare a package of refrigerated cheese ravioli (again, we like the ones from the Monterey Pasta Company) as directed on the package. Drain.
- Toss sauce and seafood mixture with cooked ravioli and you have a meal in less than 30 minutes!
