The sauce is a mixture of fresh squeezed oranges, lemons, crushed garlic, ground cumin, vinegar and olive oil. The trick here is the garlic, whole pieces of garlic must be inserted into the cavity and under the skin. As the pig is roasted the garlic juice is slowly released and it mingles with the natural juices of the pork. This is a very labor intensive meal as the meat must be constantly marinated with the "mojo" as the spit slowly turns. The meat is then complimented with a Spanish Paella, a sea food and chicken yellow rice (also labor intensive), Cuban style black beans and fried sweet plantain. For those of extremely hearty appetites there will be sweet potatoes sauté Asparagus. A fine California Rose' wine to wash it all down with. Dessert is a mixture of our German and Cuban culture with a Black Forest cake and flan. This of course must be followed by some strong espresso a Cuban/American cigar and a glass of Hines XO Cognac slightly heated.
